Hot outside?  This is a really cool (pun intended) summer dessert recipe and you don’t need to heat up the kitchen to prepare it.  I use it as an excuse to get my kids off the couch, away from DVDs and video games and involve them in the whole process.  Shopping for ingredients and preparing the pie is almost as good as eating it!

You start at the cereal isle in your favorite new grocery store, this is also a great place to meet your new neighbors.  The base or crust of the pie is made with your choice of crispy cereal.  If you don’t buy cereal on a regular basis you will be amazed at your choices.  Step two, move to the ice cream isle and decide what flavor compliments your chosen cereal.  Vanilla is still the preferred favorite ice cream flavor, but perhaps you or your shopping buddies are a little more adventuresome.  If you chose Fruit Loops maybe you’d like some Rainbow Sherbet.  Or what about Chocolate Honey Bunches of Oats with Chocolate Fudge Swirl?  Or maybe Strawberry Special K with Strawberry Ice Cream?  Now that you have settled on the two main ingredients, it’s time for toppings.  Sprinkles go great with the Fruit Loop crust.  Hot fudge is perfect for the Chocolate Fudge Swirl (but hot fudge is perfect for just about anything).  But don’t stop there, don’t forget about nuts, coconut, chocolate chips or fresh fruit.  We have often made trips back and forth from the cereal isle to the ice cream isle to topping isle to get the perfect combination.  It may turn into a longer visit to the grocery store than you anticipated, and you may end up making more than one pie.

When you arrive home it’s a good time to prepare the pie as your ice cream has already had some time to begin softening.  For the crust, once the kids have washed their hands, let them mix the ingredients and press into pan.  If you get the privilege of mixing, I suggest still using your hands, but you may wish to use some disposable gloves.

Any Way You Want It

Ice Cream Pie

Ingredients

4 cups cereal

½ cup peanut butter or marshmallow cream

½ cup light corn syrup

½ galloon ice cream, softened

Toppings

Directions

Spray pie pan with non-stick coating.  In a bowl mix together cereal, peanut butter or marshmallow cream and corn syrup.  Press mixture into greased pie pan.

Spread softened ice cream evenly on top of crust.  You may choose to use some of your dry topping ingredients now so they will stick to ice cream as it hardens.  Freeze for at least 4 hours or overnight.

When ready to serve remove from freezer and let soften for a few minutes. Top each slice with any other toppings of choice.
